What is a MASALA DABBA?

(picture from Google images)

If you love curry, you know that the "recipe" of spices changes depending on the region and the type of meat or vegetable used. The Masala Dabba is a special container that holds smaller containers of all the spices you use most often to make your favorite curry blend.

Common spices found in a Masala Dabba are: ground turmeric, garam masala, fenugreek seeds, ground cumin, mustard seeds, chili powder, ground coriander, red chili powder and black mustard seeds. This is a good beginning selection of spices, but as you become more familiar and comfortable with Indian cooking, you may decide to change some or all to meet your particular taste.

What are your favorite curry spices? How do they vary depending on what you are cooking?
